proud mommy

ok, i have to brag on my 22 month old.  she amazes us at how smart she is!  granted, we are not around a ton of kids, so we aren’t sure what is “normal” for this age.  but addi seems to be very quick for a little girl that’s not even 2!  she can officially count to TEN – one through ten – perfectly.  she knows how to sing her abc’s.  its not perfect, but the tune is right on!  she knows words that i have no idea how she learned them. two examples, the other day we were watching tv & she yelled out, “wheat!” and i swear, i looked and there was a guy on a tractor in a huge field of wheat!  how the heck does she know what wheat is?  i certainly have never talked about wheat with her.  another example, while i was in new york, ryan was telling addi while putting her to bed that mommy would be home when she wakes up the next morning.  he said she looked at him and said, “traci?”  WHAT???!!!  my daughter called me by my first name.  hopefully she will never call me “traci” to my face…its mommy & mommy only! she is just talking so well & we are proud parents!  she cracks us up daily…we never know what to expect.  this age is definitely very fun!  trying at times, for sure, but much fun.  here’s a pic from our work day at the coffee shop…

stuffed pizza

last night, i cooked stuffed pizza & it was delicious!  thought i’d share the recipe…

1 small onion chopped

1 green bell pepper chopped

3 or 4 cloves of garlic chopped fine

sliced olives

2 tomatoes diced

bunch of basil chopped

extra-virgin olive oil

1/4 cup of red wine

pre-cooked pizza crust

spaghetti sauce of your choice

sliced fresh mozzarella cheese

bag of shredded mozzarella cheese

salt & pepper

Stirfry the onion & bell pepper in some EVOO until onions are clear.  Stir in pepperoni, garlic, olives, tomatoes, red wine, part of the basil, and salt & pepper to taste.  Turn down to low, cover & let simmer for thirty minutes.  Place pre-cooked pizza crust in pie dish & layer with slices of mozzarella cheese.  Then top with veggie mixture & the shredded mozzarella.  Last, spoon on spaghetti sauce & top with a few pieces of basil & fresh mozzarella.  Bake for about 30 minutes on 350 until bubbly.  Enjoy!!!

date morning

so instead of having a “date night” ryan & i had “date morning” today.  :)  since we had to take my sister & dad to the airport this morning (they are headed to boston for the week), we thought we’d make the most of the trip. hey, when you have 2 babies, you have to take any opportunity you get to have a date time – morning, day or night!  so, grandma kept the babies for us.  we decided to drop jen & dad off at dfw & then head to the katy trail ( to get in our long run for the weekend.  the katy trail is an awesome place to run.  its exactly 7 miles if you run up & back down from the american airlines center.  its a fun place to run & very peaceful…we enjoyed it!  after our run, we went to target to do a little shopping!  i love target…always have.  i found some cute running shirts on sale for $6 a piece!  then, we went & had coffee before heading back home. great date morning baby!  here is a pic of the trail…if you live near dallas, you should definitely check this place out…

i love him.

last night, after we put the girls to bed, ryan & i spent probably two hours on our deck just talking & enjoying the evening together.  it was soooo nice out & we love our peaceful backyard.  i was also reminded of how blessed i am to have such an amazing husband…i love you ryan!

Happy 4th!

Today has been a great day.  Started out the day w/a 4 mile run…hot, but pretty easy.  I didn’t push myself on time today…just slowed down & enjoyed it.  This week of our training is supposed to be an easy week. Our long run this weekend is 7 miles, compared to the 12 miles we did last weekend!  It will be a nice break…considering the weather outside is super hot.  So anyways, on with our day…while Ryan was running, I cooked breakfast.  One of my favorite things to do is cook…I LOVE it!  I made french toast, bacon, and coffee.  Addison loves bacon…she eats it first & always wants more.  After breakfast, we just hung out around the house, being lazy!!!  We eventually made our way to the coffee shop, to check on things & get an iced caramel macc. Went to my parents for a late lunch.  It was yummy – brisket, beans, potato salad, the works!  Oh, and I made homeade coffee & heath bar icecream….first time attemping this.  It was no Ben & Jerry’s, but it was pretty tasty.  Now, we are back home & the girls are napping.  I love relaxing days like this!  And the cool thing is, its only Friday…we still have the whole weekend.  I hope everyone has had a great 4th of July! Here are a few pics of my two sweet girls in their patriotic t-shirts that Grandma bought them…

please pray!!!

ryan’s cousin, aaron & his wife jamie are in the process of adopting two beautiful children from haiti.  seems as though they have run into some hurdles…but nothing too big for our God!

go to this link (you may have to copy & paste the url) from aaron’s blog & read this & please join us in praying….

cents 4 sophie

My friend, Miranda’s little girl, Sophie…needs your prayers!  Miranda kept my two girls for me while I was working full time a a while back.  Addi LOVES Sophie and we have enjoyed getting to know them.

Read this & PLEASE take time to pray for this sweet family.  If you live in Quitman and can participate in these activities, please do!!!

“Cents for Sophie” Fundraising Begins QUITMAN — A number of community events in July will help raise money to benefit 5-year-old Sophie Asmussen of Quitman, who is bravely battling a brain tumor. Sophie was diagnosed last July at age 4, which led to two surgeries and two chemotherapy regiments, which failed to stop the tumor from growing.

Healing of this nature comes at a very expensive price when the therapies needed are not covered by insurance. Sophie’s treatments at Envita Medical Center will begin on July 8, at a rate of $7,000 per week of treatments, which is designed around a four-day, three-hours-a-day cycle. Sophie will need up to 10 weeks of treatments, depending on how quickly she responds.

A fundraising group was established just last week and decided on a multi-faceted approach to give Sophie every chance to heal.

• On Thursday, July 3, look for people in pink throughout Quitman. Those wishing to donate can by driving through the parking lot at Jim Hogg Park, by stopping at the traffic light in front of the courthouse, or by passing through the intersection of highways 154 and 37 and tossing your change in the pink buckets. Or, you may stop off in the parking lot of Brookshire’s.

After the day’s efforts, you will see “Cents for Sophie” cans, jars, and buckets all over East Texas, from Sulphur Springs to Tyler and everywhere in between.

• On Sunday, July 13, the Quitman city pool will be open to swimmers from 2-5 p.m. The entry fee is donation only, to benefit “Cents for Sophie.” The surrounding communities are encouraged to bring their children for a swim in support of Sophie.

For more information, contact Vicky Selman at (903)383-3558.

• Local businesses or individuals also may sign-up to sponsor treatment time for Sophie — one week’s cost is $7,000, one day is $1,750, one hour costs $585, 30 minutes is $292, and 15 minutes is $146. There are opportunities at every level for sponsors to directly purchase treatment time for Sophie.

To donate, you may contact City National Bank, Bank Texas, Wood County National Bank, or any of their branch offices.

For more information about any of the above events, contact Kevin Cameron during the day at (903)763-2800, or evenings at (903)763-0013.

-T-shirts with the “Cents 4 Sophie” logo will also be available beginning July 3. Adult shirts will be $15 and children’s sizes (Youth S-M-L) will be available for $10. This will be a great way to show support and have a fun PINK tee for the summer! If you’d like to order in advance feel free to email Kevan Burroughs or call at (903)850-0919.

our day today in manhattan

today is our last full day in nyc, we head home tomorrow.  we had a blast!  after jen’s training sessions today, we went for a 3 mile run in central park.  then, we headed down to the chelsea area of nyc & shopped for a while before dinner.  found a great deal on lucky jeans!  almost 75% off!  we had reservations tonight at mesa grill, bobby flay’s restaurant.  it was AWESOME!  ryan & i are big bobby flay fans.  we watch all of his shows & think he is a great chef.  unfortunately he was not there tonight…they said he was recovering from an iron chef battle this morning.  anyways…we had a shrimp+roasted garlic corn tamale for appetizer.  i had the spice rubbed ny strip steak w/smoked tomatoes with ancho breadcrumbs & creamy cilantro vinaigrette.  jen had the ancho-chile honey glazed salmon with cilantro pesto mashed potatoes.  it was amazing food!  we LOVED every bite.  we had happy plates at the end of the meal.  oh, and for dessert…chocolate+dulce de leche layer cake with tres leche icecream.  after dinner, we headed back to the hotel by way of a little more shopping.  :)  we had a fun day.  glad i got to come on this trip w/my sister! its been a blast.  can’t wait to see my handsome hubby tomorrow night & my beautiful girls!!!  here are some pics of the day…

apple on 5th and serendipity

we had a packed out day today.  here’s what our day entailed…went to work with jen this morning at a school in harlem.  she only had to work until around 11ish & then we had the rest of the day to be tourists. we got our run out of the way first (which was way fun!).  came back to the hotel & showered.  then, we had coffee at some random place…not too bad, but definitely not studio java!  we went to the apple store on 5th avenue….it was HUGE!  very cool…just crowded.  we then went down to greenwich village & ate at this small italian restaurant that has been there since 1912….monte’s trattoria.  we ordered spaghetti & meatballs & pesto penne and split both entrees…it was yummy!  after dinner, we went to the diesel store on union square & bought some jeans.  next we took the subway up to have a frozen hot chocolate at serendipity & some cream cheese cake, which was amazing! now, we are back at the hotel…TIRED and will probably hit the sack early.  getting up early to go run again in central park….have to make the most out of this opportunity!  i’m having a blast w/my sister….but i do miss my family so much!  i love you ryan.  thank you for watching the babies this week…you’re the best hubby.  :)

long run today

this morning, ryan & i got up at 5:00 a.m. to go out & hit the pavement…met up w/dad, jen, jessica & amanda for our weekly long run.  it was a great day today.  i’ve been in some kind of running slump lately…everytime i run, i basically have to talk myself out of quitting the whole time.  but today, i felt back to normal & enjoyed it.  my goal was to finish 11 miles, but i actually ended up going 12!  it was cloudy the whole time with a little breeze…so it wasn’t too hot.  great run.  now, the rest of the day we get to chill out, pack for nyc (yeah!!!), hang out with our beautiful babies, grill & spend time w/jen.  we love weekends.  and thanks to mom for letting the girls spend the night last night!!!  it was good to get a good night’s rest before the run & we enjoyed the time alone…watched fool’s gold & went to bed early.  hope everyone has a great weekend!  stay tuned for pics from new york city…we fly out tomorrow!

dinner & swimming at emmert's

tonight, we went to christi & spencer’s house for dinner.  we had a great time!  dinner was awesome (thanks guys)…grilled turkey, potatoes augratin, salad, rolls, steamed green beans, and peanut butter pie – yum. after dinner, the kids went swimming in brody’s new pool…addi had a blast!  then, to warm up, they got in the hot tub.  here are a few pics…

my productive day

every thursday, the girls go out & stay w/my grandmother “memaw” all morning & part of the afternoon. she loves to have them out there and they have a great time with her.  this gives me (1) a day at the coffee shop w/no babies and (2) some time to get stuff done!  today, i feel like i got a lot accomplished at our house.  and now i’m sitting here relaxing for a few minutes before i head out to pick up my babies.  let me just tell you what all i’ve done (hey, i’m excited about my accomplishments, i’m sure all moms will totally feels great to get things done!)….anyways, i made a peanut butter pie for our dinner w/christi & spencer tonight, vacuumed the bedrooms, mopped the tile floors, cleaned our shower, cleaned the sinks, toilets, and mirrors in both bathrooms, took out all the trash, cleaned out our refrigerator, hung a few pictures in kamryn’s room (still in the process of decorating our house), picked up all of the toys, & did the dishes.  yeah for a clean house!!! i also ordered supplies for the coffee shop, went to the bank, and rented fool’s gold for ryan & i’s date night on friday!  whew, crazy morning.  and on top of that, i’m tired & sore from our 7 mile run last night and waking up with kamryn almost every hour last night (she got shots this week).  maybe i should to take a little power nap before i go pick up my two precious angels.  life as a mom/business owner is absolutely craziness!!!  crazy, but fun.  wouldn’t trade it for the world.

snow cones on a hot day!

uncle jeff came over today & brought addi a treat…a cherry snow cone!  she loved it.  her hands, lips, tongue, and clothes were RED when she finished.  next time, get white coconut jeff!!!  :)

a special moment

tonight, i got the girls ready for bed and then we all three got in the rocker.  i was feeding kamryn a bottle and addi sat nestled right beside me.  i was singing them a song (i’m so not a singer – thank goodness they don’t realize it yet!) and they were both falling asleep.  addi looked up at me and smiled & then laid her head on my arm.  she then reached over & held kamryn’s little foot with her little hand.  as i sang along, i choked up and could hardly finish the song.  tears came down my face & i was just so thankful for my two beautiful blessings! sometimes i get so caught up in the craziness of having two babies (taking care of them, chasing them around, cleaning up after them, etc) that i tend to forget that i need to sit back & look at them and realize how awesome they are and how much of a joy they are to ryan & i.  we are blessed!!!  i love my girls & pray that i can be the mother that they deserve!

Congrats to our wonderful friends!

I just wanted to say congrats to our good friends, Danny & Ashley Sinclair.  They found out recently that they are having a girl!!!  We couldn’t be more excited for them…I know they will be awesome parents.  And I couldn’t be happier that they are having a girl!!!  Ashley – you & Beth needed a girl.  They are so much fun. True, close friends are hard to come by the older you get…we cherish our relationship with these awesome people below & miss them dearly. Love you all, Sinclair’s!

some pics of my girls!

here are a few pics that were taken the past couple of days.  and by the way, the bean bag ut chair is uncle jeff’s, not ours.  go red raiders!  kam had her 6 month well check this morning…almost 19 lbs!  she is 28 inches long…they say she’s tall like her daddy & addi.  :)  guess momma will be the short one in the family!

peaceful mornings

This morning was amazing!  Ryan & I actually had breakfast on our back porch.  The girls were still asleep, so it was quiet in the house…minus the faint sound of the food network on our TV!  Ryan made us some coffee & I made cinnamon rolls.  We love cinnamon rolls, but don’t have them often since they aren’t the healthiest breakfast choice.  But after our long run yesterday (me-10 miles, ryan-13 miles all in 90 degree heat), we felt we deserved it!  It felt awesome outside this morning & the birds were chirping.  As we sat on our deck, the horses came up to our fence in the backyard.  Beautiful & peaceful.  Ryan said, and I agreed, that he wished that moment could last an hour!  Those quiet moments in life don’t come around very often, so we have to soak them up when they do!
