3 Day Fruit & Veggie Diet: Day 2

Today has been a lot easier than yesterday! I woke up feeling ok. Around 10ish this morning, I started feeling really hungry. But after lunch, I felt fine and actually kind of full! I think adding the peas as a side to the salad helped provide more substance to my belly. As you can see below with dinner, we are starting to get a little creative with this! It was so delish. It’s actually kind of fun* trying to figure out how to make a tasty meal soley out of veggies & fruit. I will also say that we definitely haven’t been watching as much Food Network this week!

*Kind of fun – as in, not real fun, but sort of. Given the circumstances and all.

Day #2

Breakfast: Bowl of blueberries and chopped banana, 1 cup of coffee

Lunch: Organic mixed greens salad w/cherry tomatoes, celery, side of peas, & water

Afternoon snack: Green tea & grapefruit

Dinner: Grilled bell peppers stuffed with corn, onion, red bell pepper, cherry tomatoes, jalapeno, and cilantro, side of roasted asparagus, grilled pineapple, & water
